Let's talk Breakfast

I eat the SAME breakfast every day with the exception of putting either 1 cup of blueberries or blackberries in my oatmeal on some mornings. As for the eggs they almost never change. I eat 6-7 egg whites cooked in the shape on omelett with cinnamon and splenda sprinkled on it.

I start with regular eggs and seperate them myself b/c it is cheaper than buying the egg whites in a carton although I have done that in the past this is way more cost effective.


Here is my splenda in the red canister and my cinnamon.
I spray the skillet with olive oil spray or butter flavored spray and I actually turn the skillet on to medium heat at #6 and I crack and seperate the egg whites directly into the skillet (just keeps me from dirtying up another bowl. I do put the yolks in a small bowl then put them down the sink.

I just let the egg mixture sit until it sets up and then I flip half of it over like you see in the picture below. Then I sprinkle a tad more splenda and cinnamon on that side.
Then I flip to the other side and sprinkle again and cut it in half to make sure it is cooked all the way through (I don't like runny egg whites but I do like runny yolks like a sunny side egg...go figure). Then I put it in a tupperware container and put it in the fridge and I heat it up in the microvave the next morning at work for about 45 seconds. I make it at night almost always to save time in the morning.



Here is my 1/2 cup of dry oatmeal made with 1 cup of water and splenda and cinnamon and cooked in the microwae for about 3 minutes. YUM!!!!
Also, with the eggs you could also scramble the egg whites and still use the splenda and cinnamon. I choose the omelett way b/c I can let it sit and cook while I am prepping other foods for my breakfast. If you scramble you have to take time to stir it more often.

I am a creature of habit. I have had this exact same breakfast 98% of the time for the last 9 months. I never seem to get tired of it.
There are so many other ideas like:
1) egg/veggie omelet and a fruit
2) english muffin with peanut butter and a fruit
3) greek yogurt, fruit
4) toast, eggs, fruit
5) waffle, eggs, fruit
6) protein shake and oatmeal
A good balanced breakfast in my opinion has protein and some healthy carb in the form of veggies, fruit or a grain.

I, too, am a creature of habit.

My breakfast is 1/4 c oats cooked in water with 1/4 c banana whipped in to it while it's cooking. When it's done, mix in my whey and cinnamon. I dream about this breakfast at night, can't wait for morning! :)
ooooooh, I want to try this! I see April from Foods of April also makes sweet eggs but I've never tried it! Maybe tomorrow will be the day!

I'm ALL about my oatmeal with almond milk and a tablespoon of bee pollen with one packet of Truvia and a splash (or chug hehe) of Davinci Gourmet SF syrups. Seriously, if you haven't tried Davinci, DO IT NOW! They have over 40 flavors like Toasted Marshmallow, German Chocolate Cake, Dulce Leche, etc. I just buy offline and it comes with 3 days. It makes ANY recipe fabulous and I can literally have a different flavor oatmeal each morning...which is why I eat it EVERY SINGLE MORNING:)

I am currently obsessed with protein pancakes:
1/2 cup dry reg oatmeal
1/2 cup ff cottage cheese
1/2 cup egg whites (from carton lol)
1/2 cup egg beaters (because they are thicker than the egg whites and with much experimenting this is the best consistancy)

blend in magic bullet and cook on griddle just like you would pancakes. yum! also, lately I've been adding a small handful of baby spinach leaves before blending. adds some vitamins and fiber and doesn't change the flavor any just turns them green.

serve with drizzle of your fav sugar free syrup!

my other fav breakfast is egg whites and 1/2 cup of kashi go lean with 1/2 cup unsweet vanilla almond milk.
