2 days in a row...OH MY!

I made it two days in a row to the gym in the AM. Let's see if I can make it 3 in the morning. I am just doing cardio in the morning so I could do it at home if I want. I am just not sure if I will do it though and if I do if I will do it at the intensity that I need to. There is something about getting up and driving to the gym and having several other people there working out that just wakes me up and makes me push myself. So I might end up going and doing my work out at the gym instead. We shall see.

Food is SOLID!!! I hate to get excited about 2 days in a row of SOLID clean food since I have such a long way to go but I am still excited about it. I guess it is better than 2 days in a row of not sticking to my plan. Of course I had a really good week last week also and then just had 2 splurge meals on both Friday and Saturday night so I have been doing well with the food for a while now.

Here was my food from yesterday:

B - 3 boiled egg whites, 3 egg whites made into an omelet with 1 cup of spinach in it, 1 orange, 1 cup of green tea

S - apple and a controlled portion of peanut butter, no more dipping my spoon back in the jar for a little extra.

L - lunch out to eat, a turkey salad w/ vinegar and oil dressing and NO CRACKERS!

S - protein shake and 3/4 oz. of cheese

D - grilled mahi mahi, shredd cabbage w/ a mixture of cottage cheese blended w/ ranch fiesta seasoning in it (makes a dressing type stuff - YUMMY), this was over the cabbage and then I had a corn tortilla and some steamed broccoli. I put some of the cole slaw stuff and fish in the corn tortilla to make a fish taco type thing. Husband thought of this and it was GOOD!

FYI: A good tip to have as a dressing or as a veggie dip is to get low fat or fat free cottage cheese and blend up in a magic bullet or blender and then add a packet of your favorite ranch seasoning of choice and mix it up, add water to make it thick or thin, whatever consistency you like.

Awww I'm so glad you liked the recipe!! For the sweet potato rounds I simply preheated the oven to 450, spread them out on a foiled baking sheet, sprayed with olive oil spray, and sprinkled with salt. Cook for 15 minutes, flip, and cook for another 15. Voila! Easy :)
